These thin and crispy rice pancakes are usually served with a spicy vegetable or egg-based stir fry. This south Indian recipe is very easy to make, made only with a few ingredients.
You can make it in the oven or on a griddle. The traditional Arisi Puttu recipe is made using urad dal, but you can also use green moong dal (split lentils) instead of urad dal for an equally delicious result.

Ingredients for Arisi Puttu recipe
- Arisi (short-grained rice) – 1/2 cup
- Onion chopped with skin – 3 nos
- Tomato chopped with skin – 3 nos
- Carrot grated with skin – 1 nos
- Green capsicum (green bell pepper) chopped – 1 no
- Red chilli powder – ½ tsp
- Salt to taste
- Mustard seeds – 1/4 tsp
- Curry leaves – 2 sprigs
- rad dal – 1/2 tsp
- Cashew nuts chopped – 3 nos
Directions for Arisi Puttu recipe
Step 1: Soak rice for 20 minutes and drain the water completely. For more crispy rice pancakes, you can saute the soaked rice in ghee. Here I have sautéed it in ghee.
Step 2: Add 1 cup of water and pressure cook this rice till it is cooked completely. Mash and keep aside. [if cooking in a pan, cook till all water is absorbed by the rice].
Step 3: Take a thin spongy dough of rice prepared in step 1 and roll out (the batter must be fluid enough, else it might break). Heat a non-stick pan, add ghee and spread the sponged batter in the pan. Let it cook for 1 – 2 minutes on a medium flame and then flip it over.
Step 4: Add oil to the non-stick pan and let it heat, then place this Arisi Puttu on one side. Add 1 tsp of mustard seeds and the urad dal to the oil once it starts to smoke. Let them crackle and then add a whole lot of vegetables to it, we are using carrot, onion, capsicum (white, red and green bell Pepper), 1/4 tsp of red chilli powder, and 2 sprigs of curry leaves.
Step 5: Once they turn soft and are cooked properly i.e. cooked then you can taste them. You will have to adjust the salt according to your taste. Be careful, don’t add the salt before tasting. You can also adjust red chilli powder to suit your taste.
Step 6: Turning it again, add the boiled Arisi Puttu batter to the pan. Let it cook for 2 minutes on a medium flame, then flip it over and let it cook for another 2 minutes on the other side. Turn off the gas and serve this arisi Puttu with the spicy vegetable stir fry that you made earlier.
Some like to garnish this meal with coriander leaves, but they are optional. the recipe is just a suggestion. you can hold back the red chilli powder and add it only at the end when you have tasted the Arisi Puttu. if you do not have urad dal, please use green moong dal instead.
