- 1/4 cup of fresh basil (or 1/2 teaspoon dried)
- 1/3 cup of olive oil
- Salt and pepper
- 2 cloves of garlic (or 1/2 teaspoon garlic powder)
- 1/3 cup of fresh lemon juice (or 1/4 cup of rice wine vinegar)
- ( to make this recipe nut-free replace the almonds with sunflower seeds and walnuts with pumpkin seeds. )

Step 1: Preheat the oven to 375 degrees
Step 2: Wash, clean, and cut your cauliflower into thick steaks. Place all the cauliflower steaks in a bowl and toss them with olive oil, salt, pepper, garlic powder, and basil. Spread these onto a baking dish sprayed with non-stick spray if you’re using one or use a cake pan lined with parchment paper if you’re using the oven
Step 3: Bake for 15 minutes on each side or until caramelized looking then remove from oven.
Step 4: In the same baking dish or cake pan drizzle coconut oil or grape seed oil or mild vegetable oil if you don’t have coconut oil ( i use 5 for 5 blend – coconut 80%, avocado 20% & grape seed 10%) and toss to coat.
Step 5: Bake for 15 minutes, remove and flip over each cauliflower steak then bake for another 15 minutes or until caramelized looking. Optional: sprinkle pink Himalayan salt or sea salt over the cauliflower steaks after removing them from the oven. Serve hot with your favorite dipping sauce or sauce!
