Ingredients for cranberry stout recipe

  • 2 oz of cranberries
  • 1 cup sugar
  • 2 cup water
  • 1 cup light brown sugar
  • 3 cups of whole grain oats
  • 1 pound dark ale extract wort grains (7.5 L) (or 6 pounds of dried malt extract)

Directions for  cranberry stout recipe

Step 1: Wash cranberries, drain, and place in a quart-size canning jar. Place lid on the canning jar. Pour 2 cups of hot water into the canning jar. Place the lid back on tight, making sure that the rubber seal is in place

Place the canning jar into a saucepan and cover with warm water. Bring the water to a boil and keep it boiling for 20 minutes. Place the jars in cold water until cool

Step 2: Place the oats in a pot, pour boiling water over them, cover and leave overnight and drain the next day. Pour the dried malt extract, light brown sugar, whole grain oats, and cranberries into a 6-gallon cooking pot.

Step 3: Pour enough cold water into the 6-gallon cooking pot so that it’ll cover the ingredients by one inch (2.54 cm) (approximately 4 quarts, 4 liters). Bring the ingredients to a boil, and stir constantly. Mix the dark ale extract into the boiling ingredients. Reduce heat and continue to stir until all ingredients are dissolved.

The mixture should be smooth with no lumps. Boil for about 20 minutes stirring frequently. Turn the heat off and let the mixture cool for 10 minutes. Stir in 1 cup of sugar. Reduce heat and continue to stir until all ingredients are dissolved. The mixture should be smooth with no lumps.

Step 4: Transfer the stout into a sanitized primary fermenter (see note), using a large spoon, remove and discard any cranberries that may have floated to the top during boiling. The lid can remain on during this step if you plan on putting it in the refrigerator.
