Ingredients for Laai recipe

  • 1/2 cup rice flour
  • 700 grams ground beef, freshly ground
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cardamom seeds
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon ground cinnamon, optional
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions for Laai recipe

Step 1: Soak the rice for about an hour and grind it in a mill to make the rice flour. The exact proportion is 1:4, one cup of uncooked rice to four cups of water, and then grind it to make the flour.

Step 2: Place the ground beef in a large bowl, add salt, and then gradually add drops of water and knead them until they are well combined. Then place half of this mixture into a smaller bowl.

Step 3: Use half of the oil to cook the meat over a medium fire until it changes color. Drain the fat, remove from the pan and set it aside.

Step 4: Heat half of the oil in the same pan, and add cinnamon, cardamom seeds, and cumin powder. Cook over a medium fire for about three minutes and stir frequently so it doesn’t burn.

Step 5: Place rice flour into a bowl with salt, ground black pepper, and cinnamon powder.

Step 6: Mix the ground beef with rice flour and then transfer it to the pan with spices. Mix until well combined and then add vegetable oil last. Mix until well combined and then cook over a medium fire until browned.

Step 7: Add half of this mixture to the meat in the first bowl and mix well. Now use a fork or tweezer to cut the meat into small pieces and mix these into the cooked rice cake (you will see it has turned white). Reserve this mixture for later use. Set aside this mixture for later use.

Step 8: Heat the remaining amount of oil in a pan, add the meat and cook until browned and crispy.

Step 9: Add the cooked rice cake mixture and mix well over a medium fire until it turns brown.

Step 10: Remove the pan from heat and serve on top of steamed rice.
