The leaves of one bunch of spinach are coarsely chopped and set aside. One onion is diced and sautéed with chopped garlic in a tablespoon of butter. One cup or 8 ounces of uncooked orzo pasta is added to the mixture and sautéed until it becomes tender.

Ingredients for one-pan orzo with spinach and feta recipe

  • 8 ounces of uncooked orzo pasta
  • One bunch of fresh spinach leaves coarsely chopped
  • 1 onion diced
  • 1 garlic clove chopped
  • 1 tablespoon of butter
  • 2 ½ cups of water or 500 mL 

Directions for one-pan orzo with spinach and feta recipe

Step 1: Cook orzo in a pot of boiling water for 10 minutes.

Step 2: Drain the orzo into a sieve and rinse with cold water.

Step 3: Heat one tablespoon of butter in a frying pan and add onions. 

Step 4: Add the garlic, orzo, and chopped spinach leaves to the pan (leaving out excess water from the spinach) and mix well.

Step 5: Add salt, pepper, lemon juice to taste, and ¾ cup feta cheese and mix well.

Step 6: Add 2 ½ cups of water to the mixture.

Step 7: Mix, heat, and simmer for 10 minutes while mixing occasionally. 

Step 8: Top the finished dish with the feta cheese and serve immediately!
