Ingredients for panes rellenos salvadorenos recipes

  • 2 ½ cups (300 g) mashed potatoes
  • ¼ cup (½ [60 ml]) olive oil
  • Salt and pepper to season
  • 1 garlic clove, minced
  • 2 large eggs, lightly beaten
  • 2¼ pounds (.54 kg) ground beef
  • 7-ounce (200 g) can of green olives in brine, drained and patted dry with paper towels. If using canned olives in tomato sauce, drain the liquid but do not pour off the oil from the jarred tomatoes.

Directions for panes rellenos salvadorenos recipes

Step 1: Take a large skillet and fry ground beef until cooked; season with salt and pepper. Add fresh chopped garlic to the ground beef, and cook until slightly brown.

Step 2: Remove ground beef from the skillet, and set aside on a paper towel-lined plate. In the same pan, remove all of the drippings.

Step 3: Add mashed potatoes and olive oil, and mix well with a wooden spoon to avoid lumps—season with salt and pepper.

Step 4: Form a circle with the mashed potatoes and make about a 6″ diameter. Pour beaten eggs into the center and cook until golden brown on both sides. Remove from the pan and set aside.

Step 5: In the same pan, add olive oil, garlic, olives, and ground beef and season with cilantro, salt, and pepper. Cook for about 3–5 minutes on medium heat until heated through. Remove from the heat.

Step 6: Place the mashed potatoes on a serving plate, and place about 2 tablespoons of the mixture in the center. Fold to form a pleated shape, and place over the top. Place cooked eggs on top of the folded mashed potatoes.

Step 7: Serve immediately.
